This proofing cabinet provides the ideal environment for readying bread dough before baking. Its perfect for bakeries that produce a large quantity of bread products such as loaves, buns, rolls, and baguettes. With the capacity to hold up to (35) 18 x 26 food pans, youll have plenty of storage to get you through even the busiest of days.

Nellas proofer circulates heat evenly throughout the cabinet from an air baffle and circulating air blower. It features a digital temperature display as well as a switch to toggle between heating and proofing modes. With two easy-to-use dials, youre able to adjust the temperature up to 180F (82C) as well as control the humidity within the cabinet between 30% and 95%.

The unit is made from a durable and easy-to-clean material and features an aluminum framed clear door so you can keep a close eye on your dough and other products within the cabinet. In addition, it comes equipped with four swivel casters and brakes on the front pair.
