Easily switch between holding and proofing modes with the Metro C515-CFC-U Half-Size Non-Insulated Heated Holding and Proofing Cabinet Combination.
Heated Holding and Proofing Modes
With just one switch youll be able to toggle between heated holding and proofing modes to suit your needs.
Your freshly cooked food will be kept hot and ready-to-serve when using the cabinets heated holding mode. The adjustable dial, lets you easily set the cabinet temperature between 80F and 190F in order to keep any type of dish at its required temperature for serving.
When needed for proofing, you can easily set the temperature to lower levels as well as adjust the humidity up to 95% RH in order to effectively ready dough for baking a number of different bread products.
This high-performance cabinet delivers 2,000 watts of power giving you the confidence that your food is being held at safe temperatures at all times.
High Capacity and Versatile Cabinet
The Metro C515-CFC-U is a half-size cabinet and comes equipped with 8 universal slides for holding a variety of pans. The nickel-chrome electroplated wire slides are adjustable on 1.5 increments giving you the option to add more as needed. The slide style offers you the convenience of holding up to (8) 18 x 26 pans or up to 16 full-size 12 x 20 GN pans.
The aluminum cabinet comes standard with 5 swivel casters with brakes on the front set allowing you to easily move the unit as needed for cleaning or maintenance. It features a clear aluminum and polycarbonate door so you can see and monitor your products inside at all times without opening it up and disrupting the process.
